Chocolate Chunk Cookies

Schtart the year off right with a fresh batch of schtoney cookies, with coconut & dark chocolate chunks.

You’ll need:

1 1/4 cups softened butter

1 1/4 cups all-purpose flour
1/2 cup dark chocolate chunks
1/2 cup shredded sweetened coconut
1/2 cup brown sugar
1/2 cup granulated sugar
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1/8 teaspoon salt
1 egg


Preheat the oven to 325 degrees. In a large bowl, mix sugars and “the butter” really well. Then mix your egg, salt, baking soda and flour. Fold in the coconut and dark chocolate and put in the fridge for a couple minutes.

On a greased cookie sheet place heaping teaspoon rounds about 1 1/2 inches apart. Cook about 12 minutes, or when you see the edges first turn golden.

It’s better to under-cook your cookies. They’ll continue to cook after you take them out of the oven. If you’re not a fan of extra chewy cookies, you can always put them back in the oven to crips them up.

Also, feel free to sub coconut & dark chocolate for chopped macadamia nut & white chocolate…
